Simply put, Eton Mess is a messy Pavlova: meringues, berries and cream. I love to make my Eton Mess using English clotted cream that comes in a little glass jar, but regular whipping cream works just as well. You can always buy meringues from a store if you want a quick and easy dessert experience! It is so simple and refreshing any time of the year, but especially in the summer.
Ingredients
4 egg whites (room temperature & fresh, not from a carton of egg whites)
1 teaspoon vanilla extract
2¼ cups powdered sugar
Fresh berries
Clotted cream or whipping cream
Directions
- Preheat oven to 200°F and line a sheet pan with parchment paper.
- Place 4 eggs whites (room temperature and fresh) in a bowl and whisk until they become foamy. Next, add 1 teaspoon of vanilla extract and whilst continuing to beat, slowly add 2¼ cups of powdered sugar. Beat until stiff peaks form and the meringues look satiny. This can take up to 10 minutes.
- Using a tablespoon, spoon meringues onto the parchment paper-lined pan. The meringues can be placed quite close together as they do not spread when baking. Place in the oven and bake for 90 minutes. After 90 minutes, turn the oven off and let them cool in the oven.
- To assemble Eton Mess, crumble meringues into a serving bowl, fold in berries and cream and enjoy!
Tips & Bits
- Seeing as meringues take a long time to bake, making them ahead of time makes for a super easy dessert day preparation!
- Store meringues in an airtight container.
