These gooey morsels will bring warmth to your palate with their mélange of spices and chocolate. They are almost brownie-like in texture and a perfect accompaniment to a cup of tea or coffee. I love them any time of the year but especially in the fall and winter months.
Ingredients
1½ cups all-purpose flour
¼ cup cocoa powder
1¼ teaspoons baking soda
2 teaspoons ground ginger
2 teaspoons cinnamon
¼ teaspoon cardamom
½ teaspoon allspice
¼ teaspoon nutmeg
½ teaspoon salt
Dash of cayenne
½ cup unsalted butter (melted)
⅛ cup brown sugar
⅛ cup granulated sugar
⅓ cup molasses
2 teaspoons vanilla extract
1 egg (room temperature and beaten)
1 cup dark chocolate chips
Granulated sugar for coating
Directions
- Preheat oven to 350°F and line a cookie sheet with parchment paper.
- In a bowl, combine 1½ cups of all-purpose flour, ¼ cup of cocoa powder, 1¼ teaspoons of baking soda, 2 teaspoons of ground ginger, 2 teaspoons of cinnamon, ¼ teaspoon of cardamom, ½ teaspoon of allspice, ¼ teaspoon of nutmeg, ½ teaspoon of salt and a dash of cayenne and set aside.
- In a separate bowl, combine ½ cup of unsalted butter (melted), ⅛ cup of brown sugar, ⅛ cup of granulated sugar, ⅓ cup of molasses and 2 teaspoons of vanilla extract. Next, mix in 1 egg (room temperature and beaten).
- Add the dry ingredients from Step 2 to the wet ingredients from Step 3 and mix until just combined. Fold in 1 cup of dark chocolate chips. Refrigerate for 10 minutes. Scoop out dough balls, roll them in granulated sugar and place them on the parchment paper-lined cookie sheet. If you prefer a flatter cookie, flatten the dough balls before baking. Bake at 350°F for 8-10 minutes. The less time, the gooier they will be.
